Bacon, Spinach + Cheese Egg Bites

As most of you know, we just started the Keto Diet and today marks DAY 1.

This simple recipe is one of my favorites to prep for the work week with an entire prep and cook time of under 20 mins!

Ingredients:
5 to 9 strips of bacon, chopped
½ large onion (optional)
1½ cups shredded cheddar cheese
2 to 3 cups of spinach
12 eggs
cooking spray

Instructions:
Preheat oven to 350°F Spray your cooking spray in a muffin pan. Set aside.
Beat together eggs + add in the shredded cheese and stir to combine. Set aside.
If you choose to buy bacon to make at home take a frying pan and cook bacon first. We like to use the bacon that is precooked. I pull apart little pieces and throw it in the bowl with the eggs and cheese. In another frying pan, sautee’ spinach. Cook for about 3 minutes or until spinach is wilted then remove it from heat and let cool for five minutes.
Add spinach mixture to the egg, cheese and bacon mixture and stir to combine. Ladle egg mixture into a muffin pan being careful to not overfill the muffin cups. Fill them about 3/4 of the way. Cook on 350°F for 15 minutes.
Remove from oven and let cool for 5 minutes before removing from the muffin pan. I then loosen the sides of the muffins with a butter knife and then gently remove them.
